Pumpkin Purée Cookies

2 cups butter, softened

2 cups sugar

2 tsp baking powder

2 tsp baking soda

1 tsp salt

1 tsp ground cinnamon

1 tsp ground nutmeg

2 eggs

2 tsp vanilla

1 15 oz can pumpkin purée

4 cups flour

powdered sugar



1Preheat oven to 350 degrees F.

2In a large bowl, beat 2 cups butter with an electric mixer on medium to high speed for 30 seconds.

3Add sugar, baking powder, baking soda, salt, cinnamon and nutmeg and beat until combined.

4Add eggs and vanilla; beat until combined.

5Add pumpkin and flour and beat with mixer.

6Drop dough onto cookie sheet keeping them 2 inches apart.

7Bake in preheated oven for 10-12 minutes or until tops are set.

8Transfer cookies to a wire rack; let cool.

9To finish, add powdered sugar or pecans.
