1Put in a big pot the beef tongue and lip, add salt to taste, lemon, garlic powder and a leaf of laurel. Cook it over low heat. Let it cook for around 6 hours.
2Turn off the heat. Separate the meat from the water, and put them in different containers.
3Clean and peel the tongue removing the external layer.
4Chop the meat and put it in a frying pan.
5Add water to the pan so it doesn’t dry out after a while (use the water used to cook the meat).
The Chipotle Sauce
1Put a cast-iron pan over medium heat and cook the tomatoes until their skin is slightly burnt (approximately 10 minutes)
2Remove them from the oven, peel their skin and cut them into cubes.
3Blend the tomato, onion, cilantro, lemon juice, oil, garlic, chipotle and salt.
4Strain the mix and put it in a small sauce container.
To Finish
1Chop the onion and coriander branches into tiny pieces. Mix them. Put the mix in a small container. You can use this mix to fill your tacos along with the barbacoa. You can add lemon and salt to taste to each taco.
