Ingredients

4 ½ lbs lard

2 ½ lbs pork rib (in large pieces)

2 ½ lbs pork butt (in large pieces)

2 cups water

4 oranges

salt to taste

1 onion

1 head garlic cloves

seasoning herbs (bay leaves and oregano)

tortillas

Directions

1Heat lard over a hot copper jam and let it boil

2Add the meat

3In about 20 minutes, it will slowly change color

4In a separate bowl, mix the water, juice of 4 oranges and salt to taste

5Carefully pour the juice you just prepared on the cooking meat

6Add orange peels, onion, garlic and seasoning herbs

7Let the meat cook for about 2 hours, if you prefer a crispy exterior, leave them in longer until you reach the desired texture

8And it’s ready! You can serve the meat (carnitas) in tacos or plated, enjoy!
