COCHINITA PIBIL

Ingredients

FOR THE COCHINITA

4 garlic cloves

½ white onion

½ cup oil

3 ancho peppers

3 guajillo peppers

3 pasilla peppers

8 oranges

½ cup of achiote (annatto)

1 lb of pork skirt

1 lb of pork leg

FOR THE DISH

1 purple onion

5 habanero peppers

10 lemons

Salt to taste

Directions

1Slice the garlic and white onion

2Add oil to a large pan and leave it over low heat

3Remove the stalk, seeds and white membrane from the ancho, guajillo and pasilla peppers

4Add the onion to the pan

5When the onion is golden brown, add the garlic and stir for 30 seconds, remember that the garlic will brown very quickly

6Pour the onion and garlic in the blender, leaving the oil in the pan

7Add the peppers to the oil you already had to soften them a little (no more than 1 minute) and add them to the blender as well

8Cut the oranges and squeeze the juice over the peppers, onion and garlic that are in the blender

9Liquefy

10Add the achiote (annatto) and blend again

11Put the meat in an express pot and with a strainer pour the sauce that you just liquefied into the pot

12Cover and leave on high heat for 20 minutes or until the lid starts to make noise, then leave on low heat for another 25 minutes

13While the meat is cooking, start to prepare the purple onion with habanero so that it can marinate in the lemon

14Shred the purple onion

15Slice the habaneros peppers

16Cut the lemons and add the juice to the pepper and onion mixture

17Add salt to taste and mix together

18Take the meat out of the pot and start to break it apart it on a large plate

19Add the sauce that was left in the pot

20Now you can enjoy some good tacos, add a little purple onion with habanero pepper on top and yummm!
