1Place the potatoes in a pot with cold water and cover for about 30 minutes until well cooked
2After 30 minutes check on the potatoes, if they are already well cooked let them cool off for a little while
3Start peeling the potatoes and grate them
4Place the grated potatoes in a separate container and add the shredded cheese, bread crumbs, an egg and salt to taste
5Mix together
6Add the other egg and mix again
7Moisten your hands with a little oil so the mixture doesn’t stick to your hands when you make the patties
8Take enough to make a little ball with the mixture
9Put the patties in a pan with hot oil
10Turn them every 30 seconds or less so they don’t burn, they will start changing color
11Once golden, place them on a napkin to remove excess oil
12You can enjoy this delicious recipe with a side salad of lettuce and tomato, if you prefer it as an afternoon snack add ketchup or a dressing of chipotle mayo
