Ingredients

6 tablespoons or 3 ounces of butter

1 pearl onion or white onion, minced - about 2 cups

4 cloves garlic, crushed

1 teaspoon ground achiote

1 teaspoon ground cumin

1 pound ground beef

10 ounces of chorizo

6 ounces bacon, diced

1 apple, peeled and diced

1 cup raisins or an assortment of chopped nuts (cherries, plums, apricots, etc.)

1 cup olives, sliced

½ cup chopped walnuts

3-4 sprigs of fresh herbs (thyme, oregano, parsley, etc.)

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 cup sweet wine - you can use muscatel, Gewürztraminer, port

2 cups bread crumbs, and an extra scoop to sprinkle over

2 eggs, lightly beaten

2 cups white wine or chicken broth

Directions

3Cook until the onion is soft and transparent, about 5 to 7 minutes.

4Add ground beef, chorizo ​​and bacon.

5Mix well and cook for about 10-12 minutes.

6Add raisins, chopped apple, walnuts, olives, ground cinnamon, ground nutmeg, herbs and sweet wine.

7Let cook for about 10 minutes.

8Remove the sprigs of herbs from the mixture.

9Add bread crumbs and beaten eggs, mix well and cook for another 5 minutes.

10Add white wine or chicken broth and mix well.
