4 lbs. pork skin cut into 3-4 inch squares, or into 3x1 inch strips. You can remove excess fat from the skin to get low calorie Mexican chicharrones.
1 lbs. lard.
Salt to taste.
1Heat a pot over medium heat.
2Put the lard in the pot and heat until it is very hot.
3Put the pork skin in the pot. It is important to move the skin frequently to avoid it from sticking to the bottom of the pot.
4Cook the skin for about 1 hour until it looks smooth. Season with salt to taste.
5Cook and move the skin constantly for another hour until it gets browned.
6Check one chicharron by taking it out and letting it cool to see if it has the consistency you want.
7If it's crunchy, but it's not hard, then it's ready.
